The all-purpose baking mix we use for these gluten free peanut butter cookies is 4 cups of almond flour, 1 cup of golden flaxseeds, 1/4 cup of coconut four, and 2 teaspoons of baking soda. (Flaxseed may not be allowed on GAPS.)
Preheat the oven to 350*F and grease two baking sheets.
In a large bowl mix all the ingredients until thoroughly mixed. The mixture will be wet, gooey and sticky.
Using a spoon, make 12 mounds on the cookie sheet. Bake for 15 minutes or until slightly firm.
Remove from oven and using a fork make a criss-cross pattern on the tops.
Serve and enjoy!
