Our usual GAPS diet breakfast is sautéed onions, scrambled eggs and avocado. It is our routine. There are ten of us eating after all and why not keep it simple.
For Sunday brunch, this sausage and bell peppers recipe seriously dazzles our taste buds. It really hits the spot after a week of same-old, same-old. Even better, it is easy enough for the novice cooks in the household to put together.
In a large skillet cook the sausage until almost fully cooked. Meanwhile cut the peppers unto small pieces. Add the peppers to the sausage. Stir and cook the sausage fully and until the peppers are a little transparent. Serve hot.
Bee-Jay and Teen-A brought this meal idea home with them from camp. At camp the cooks bought 3 pound loaves of Jimmy Dean sausage and a bag of six red, orange and yellow peppers from Costco. You can see how this recipe is easily adapted to feed a crowd.
A great side that is also GAPS allowed is poached eggs prepared with plenty of salt, pepper and butter.
Read your labels and try to buy pork sausage that is sodium nitrate free. Happy Sunday brunch and let someone else do the cooking. Wink.
